CHILLI CON CARNE

The classic Tex-Mex dish, spicy and full of flavour

Ingredients

  • Ground beef
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 can (14.5 oz/400g) diced tomatoes
  • 1 can (15 oz/425g) kidney beans, drained and rinsed
  • 1 cup beef broth
  • Salt and pepper to taste

  • 1. Heat the oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes
  • 2. Add the garlic and cook for another minute until fragrant
  • 3. Add the ground beef to the pot, breaking it up with a spoon, and cook until browned
  • 4. Stir in the spices (chili powder, cumin, paprika, oregano) and cook for another minute to release their flavors
  • 5. Add the diced tomatoes, kidney beans, and beef broth. Stir to combine
  • 6. Bring to a simmer, then reduce the heat to low. Cover and let it cook for about 30 minutes, stirring occasionally
  • 7. Season with salt and pepper to taste.
