Ingredients

  • For the Cake
  • 185g unsalted butter, softened
  • 185g caster sugar
  • 3 medium eggs
  • 185g self-raising flour
  • 1 pinch of salt
  • For the Coffee Syrup
  • 125g strong hot coffee
  • 15g caster sugar
  • 1 tbsp rum
  • For Vanilla Cream
  • 300ml whipping cream
  • 25g icing sugar
  • ½ tsp vanilla extract

  • 1. Preheat the oven to 170°C (gas mark 3.5). Grease and flour a 20cm ring tin
  • 2. Prepare the cake batter: Beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well. Fold in flour and salt
  • 3. Bake: Pour the batter into the prepared tin and bake for about 25 minutes until golden brown and springy
  • 4. Cool and soak: Let the cake cool for 10 minutes, then turn it onto a wire rack. Dissolve sugar in hot coffee, add rum, and pour over the cake
  • 5. Make the vanilla cream: Whip cream, icing sugar, and vanilla to medium peaks. Spread most of it over the cake
