AUSTRIAN STYLE COFFEE CAKE
A rich indulgent coffee cake
Preparation Time: 25 minutes
Ingredients
- For the Cake
- 185g unsalted butter, softened
- 185g caster sugar
- 3 medium eggs
- 185g self-raising flour
- 1 pinch of salt
- For the Coffee Syrup
- 125g strong hot coffee
- 15g caster sugar
- 1 tbsp rum

- For Vanilla Cream
- 300ml whipping cream
- 25g icing sugar
- ½ tsp vanilla extract
- 1. Preheat the oven to 170°C (gas mark 3.5). Grease and flour a 20cm ring tin
- 2. Prepare the cake batter: Beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well. Fold in flour and salt
- 3. Bake: Pour the batter into the prepared tin and bake for about 25 minutes until golden brown and springy
- 4. Cool and soak: Let the cake cool for 10 minutes, then turn it onto a wire rack. Dissolve sugar in hot coffee, add rum, and pour over the cake
- 5. Make the vanilla cream: Whip cream, icing sugar, and vanilla to medium peaks. Spread most of it over the cake
