Chicken Tikka Masala, a rich, creamy, and flavorful dish

Ingredients
For the Chicken Marinade:
1 cup plain yogurt
1.5 tbsp garlic (minced)
1 tbsp ginger (grated)
3.5 tsp garam masala
1 tsp turmeric
2.5 tsp ground cumin
1 tsp Kashmiri chili powder
2 tsp salt
28 oz boneless chicken thighs, cut into chunks
For the Sauce:
2 tbsp butter
2 small onions (finely chopped)
1.5 tbsp garlic (minced)
1 tbsp ginger (grated)
1 tsp turmeric powder
1 tsp ground coriander
14 oz tomato puree
1 tsp Kashmiri chili powder
1 tsp red chili powder
1.25 cups thickened cream
1 tsp brown sugar
¼ cup water (if needed)
4 tbsp cilantro (for garnish)
1. Marinate the Chicken: In a bowl, mix the chicken with yogurt, garlic, ginger, garam masala, turmeric, cumin, chili powder, and salt. Let it marinate for at least 30 minutes (or overnight for deeper flavor)
2. Cook the Chicken: Heat oil in a pan over medium-high heat. Cook the marinated chicken in batches for about 3 minutes per side until browned. Set aside
4. Simmer the Sauce: Pour in tomato puree, chili powders, and salt. Let it simmer for 10-15 minutes until thickened
5.Combine & Finish: Stir in cream and sugar, then add the cooked chicken. Simmer for another 8-10 minutes until the chicken is fully cooked and the sauce is rich and creamy
6.Serve: Garnish with cilantro and serve with hot garlic butter rice or naan bread
