The first time I tried this was on my first holiday abroad in Greece. Brings back so many memories it has become one of my favorite meals, not to mention if tastes delicious
Ingredients
2 whole sea bream, cleaned and scaled
4 garlic cloves, sliced
2 sprigs of fresh rosemary
1 lemon, sliced
4 tablespoons olive oil
Salt and pepper to taste
1 cup cherry tomatoes, halved
1/2 cup white wine (optional)
1. Preheat your oven to 200°C (400°F)
2. Prepare the fish: Make a few slashes on each side of the sea bream. This helps the flavors penetrate the fish
3. Stuff the fish: Insert slices of garlic, rosemary sprigs, and lemon slices into the slashes and the cavity of the fish
4. Drizzle the fish with olive oil and season with salt and pepper
5. Place the fish in a baking dish. Scatter the cherry tomatoes around the fish and pour the white wine over (if using)
6. Bake in the preheated oven for about 25-30 minutes, or until the fish is cooked through and flakes easily with a fork
