BLACK SESAME DESSERT SOUP

My mums favourite dessert that she made only on special occasions. Still brings back wonderful memories.
Ingredients
- ½ cup black sesame seeds

- ¼ cup white rice (jasmine or glutinous; soak 30 min beforehand)

- 3 cups water (plus more for soaking)

- ¼ cup sugar (or to taste)

- Pinch of salt
- 1. Heat a dry skillet over medium-low
- 2. Add sesame seeds and stir constantly until fragrant and popping slightly (be careful not to burn)
- 3. Let cool
- 4. Drain the soaked rice
- 5. In a blender, combine toasted sesame, soaked rice, and 1 cup water
- 6. Blend until very smooth
- 7. Pour mixture into a saucepan with remaining 2 cups water
- 8. Bring to a gentle boil, stirring constantly
- 9. Reduce to low heat and cook until thickened (8–10 minutes)
- 10. Add sugar and salt, stir until dissolved
- 11. Ladle into bowls while warm
- 12. Optionally drizzle with coconut milk or sprinkle with roasted nuts for texture
