CHILLI CON CARNE
The classic Tex-Mex dish, spicy and full of flavour

Ingredients
- Ground beef
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 can (14.5 oz/400g) diced tomatoes
- 1 can (15 oz/425g) kidney beans, drained and rinsed
- 1 cup beef broth
- Salt and pepper to taste

- 1. Heat the oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes
- 2. Add the garlic and cook for another minute until fragrant
- 3. Add the ground beef to the pot, breaking it up with a spoon, and cook until browned
- 4. Stir in the spices (chili powder, cumin, paprika, oregano) and cook for another minute to release their flavors
- 5. Add the diced tomatoes, kidney beans, and beef broth. Stir to combine
- 6. Bring to a simmer, then reduce the heat to low. Cover and let it cook for about 30 minutes, stirring occasionally
- 7. Season with salt and pepper to taste.
