Your Story - Behind the Recipe

If there’s one dessert that instantly transports me back to my childhood, it’s Gajar Ka Halwa. The moment I catch that sweet, earthy aroma of carrots slow-cooking in ghee (or coconut oil these days), I’m back in my mum’s kitchen—wrapped in a woolen shawl, watching her stir the pot with quiet devotion. This wasn’t just a dessert. It was a winter tradition. Every year, as the temperature dipped and fresh red carrots flooded the markets, my mum would make batch after batch of halwa. No shortcuts. Just love, patience, and a whole lot of stirring.tasted like home.

Ingredients

  • Carrot (grated): 3 cups
  • Ghee (clarified butter): 4 tablespoons
  • Whole Milk: 4 tablespoons
  • Condensed Milk: 6 tablespoons
  • Cardamom Powder: ¼ teaspoon
  • Chopped Nuts (for garnish): as desired (e.g., almonds, cashews, pistachios)

  • 1. Sauté Carrots: Heat ghee in a pan. Add grated carrots and sauté for 5–8 minutes until soft and moisture evaporates
  • 2. Add Milk: Pour in the milk and cook until it dries out completely
  • 3. Sweeten & Flavor: Stir in condensed milk and cardamom powder. Cook on medium-low heat until the mixture thickens. Stir continuously to prevent burning
  • 4. Garnish & Serve: Top with chopped nuts. Serve warm or chilled
