Ingredients
4 chicken thighs (bone-in, skin-on)
2 tablespoons olive oil
1 tablespoon soy sauce
1 tablespoon brown sugar
1 tablespoon allspice
1 teaspoon thyme
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon black pepper
1 teaspoon salt
2 cloves garlic, minced
1 small onion, chopped
2-3 Scotch bonnet peppers, chopped (adjust to taste)
Juice of 1 lime
2 tablespoons vinegar
1. Prepare the Marinade: In a blender or food processor, combine the olive oil, soy sauce, brown sugar, allspice, thyme, cinnamon, nutmeg, black pepper, salt, garlic, onion, Scotch bonnet peppers, lime juice, and vinegar. Blend until smooth
2. Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight
3. Grill the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill for about 6-8 minutes per side, or until the chicken is cooked through and has a nice char
